A proud Paso Robles native, Chef Rachael Zollo has always felt deeply connected to the culinary and agricultural landscape of California's Central Coast. What began as an early love of cooking grew into a lifelong pursuit of creating food that brings people joy, warmth and connection.

At Enoteca, Chef Rachael draws inspiration from Mediterranean and Italian traditions while celebrating the fresh, seasonal ingredients of her home region. She works closely with local farms and purveyors, allowing the natural character of each ingredient to guide her menus.

Her approach is thoughtful yet approachable, pairing expressive flavors with the renowned wines of Paso Robles. Every dish reflects her belief that the best dining experiences are rooted in a sense of place and made memorable through the simple pleasure of sharing good food.
